Living in a rural area, we have many farm markets. This year there was a vast supply of certain vegetables such as zucchini. Charitable home gardeners are filling food pantries with zucchini and sweet corn and other summer vegetables, and it is sitting there. Those using food pantries want packaged, overly processed foods because it’s fast and it’s what kids will eat. We also have solar farms going up all over the Midwest converting valuable farm land into industrial waste sites in a decade.
