I agree with your sentiment totally. God is the Creator of all creation. However, in this passage, Jesus was referring specifically to the change in God's covenant with Israel with the coming of the Messiah. He is referring to the grafting in of the wild olive branches (Gentiles) into the native olive tree (the Israel of God) and all will be the body of Christ on earth with one Lord, the risen King.
